Vyos isn’t a “Application Aware Firewall”, which is what it sounds like you’re after. There’s no simple way to say “Stop all Video streaming”
I think you’d be better off using something like AdguardHome as your client’s DNS server and blocking streaming sites that way, by default AdguardHome can block Youtube, Twitch and a few others.
That’s my suggestion anyway, maybe someone else will have a cleverer idea.
