Need some advice here. For people using Vyos as PPPoE / IPoE Servers. How do you monitor subscribers activity? Please help with some ideas.

The basic monitoring tool is SNMP , from there you can check PPPoE interfaces, their bandwidth, packets, errors, IP address and so on.
I don’t know if this helps but that’s where I would start.
SNMP + dynamic interfaces it is a bad idea
Don’t use SNMP if you have more then 100 sessions 
With 2-3k users +SNMP it may brake the server
What exactly do you want to monitoring?
Want to monitor BW + user sessions. The users will be around 2K per server
